Now this recipe, I can give the credit where credit is due! I got this recipe from Amanda over at Running With Spoons and these are seriously a melt-in-your-mouth cookie. A recipe that will become a staple. A “go-to” cookie recipe. A cookie that you will literally crave on your emotional days. I mean, if you like coconut…if you don’t like coconut, I don’t even know what your doing here…just kidding. Kinda. 😉
And as your making a batch of these, you might as well just double it. I’m just sayin’…
3/4 C. old-fashioned oats
1/2 C. almond meal/flour
2 Tbsp. coconut flour
1/4 C. unsweetened shredded coconut
1/2 tsp. baking powder
1/4 tsp. salt
1/4 C. coconut sugar
2 Tbsp. honey
1 egg, lightly beaten
2 Tbsp. melted coconut oil
1/2 tsp. vanilla
1/4 C. dark chocolate chips/chunks
Combine oats, almond flour, coconut flour, coconut, baking powder, salt, sugar, and honey.
In another bowl, whisk the egg, coconut oil, and vanilla.
Add to the dry ingredients.
Fold in chocolate chips.
Place in fridge for 30 minutes. (And this step, I usually skip because I need the cookies ASAP, but this time I actually followed these directions and let them chill for 30 minutes. I mean, right after I ate some of the raw
egg cookie dough…)
Place cookies on a pan lined with parchment paper.
Bake for 8-10 minutes at 350* or until the edges turn brown.
