Black Bean Veggie Burgers

Here is the link to the recipe that I used, but as you will soon find out, I made some substitutions in the recipe.

1 – 16 oz. can of black beans, rinsed and drained

1/2 green pepper, diced

1/2 onion, diced

1 egg

1/2 C. bread crumbs (I used about 1/4 C more to keep them from falling apart)



chili powder

Parmesan cheese (optional – I added this in to, again, help them to stay together)

hot sauce or Trader Joe’s taco seasoning (just a little bit!)

Blend the peppers and onions in a food processor. Add the beans and blend. Then add the egg, bread crumbs, and seasonings, and blend.

You can grill these on the grill, on a piece of foil that has been sprayed with olive oil, at high heat for 8 minutes on each side. Or, you can do what I did, and cook them in a cast iron skillet for about 10 minutes on each side.

I served these on thin sandwich buns with some guac and sriracha and spinach! YUM!!!
