Chocolate Zucchini Bread

I’m not sure where I came across this recipe. Probably Pinterest…But tonight was the first time making it. Obviously it was a home run with The Hus and the Mom because it’s getting posted for ya’ll!

3 C. flour (I used 2 3/4 C. of Whole Wheat flour)

1/4 C. cocoa powder

1 TBSP. ground cinnamon

1 tsp. baking soda

1/2 tsp. baking powder

1 tsp. salt

2 C. cane sugar

3 eggs

1 C. olive oil

2 tsp. vanilla

2 C. shredded zucchini

1 C. chopped walnuts

1 C. organic choc chips

Combine flour, cocoa, cinnamon, baking soda, baking powder, and salt. In a separate bowl, combine sugar, eggs, oil, vanilla. Beat until combined. Stir in zucchini. Add flour mixture and stir until moistened. Stir in nuts and choc chips. Pour into 2 – 9×5 loaf pans.

Bake at 350 degrees for 55 minutes, or until toothpick comes out clean. The recipe says to let cool, but in our household, we try things out right outta the oven. 😉
