“Healthier” Fudge

This recipe is GREAT! I couldn’t even tell you where I found it, but I made it a few weeks ago and The Hus and I loved them! And they don’t spike your sugar if your diabetic! (I’ll have to do a post on our diabetes research since Philco was diagnosed with diabetes 2 years ago, but since changing his diet he’s been able to eliminate the meds and keep it under control himself.)

 

 

3/4 C. Almond Butter

1/2 C. Coconut Oil

1/4 C. Honey

1/2 C. Cocoa Powder

1/2 C. Sweetened shredded coconut

1/2 tsp. pure vanilla

1/2 C. Enjoy Life chocolate chips

Line 9×9 pan with wax paper. Microwave for 1 minute: almond butter, coconut oil, and honey. Add cocoa powder and vanilla and mix. Add in the coconut. Sprinkle in the chocolate chips and then pour into pan. Let sit in refrigerator for 2-3 hours.
