Healthy Reese Cups

The start of my husband and I’s lifestyle change came when he was diagnosed with diabetes. We were in our early 30’s and I don’t know who it hit home with more – him or me. It scared us both into changing our eating habits and taking better care of ourselves. Since we both love sweets – I love my peanut butter and chocolate sweets, but he just may be more of a chocoholic than I am – I had to come up with healthier versions of all of our favorite sweets. And so the research began! (And boy, do I love research!) Here is a recipe for healthy Reese cups that we both love and they don’t spike my husbands sugar at all.

3/4 c. of crunchy peanut butter
2 tbsp. honey
1 tsp. vanilla
1/4 c. of coconut oil
4 ounces of unsweetened chocolate
2-4 tbsp. honey *

~In a small bowl combine the peanut butter, coconut oil, vanilla, and first two tablespoons of honey. Mix until well combined.

~Drop by heaping teaspoon into mini cupcake pans. Place in freezer.

~Chop chocolate into small pieces and place in the top of a double broiler (or in a heat proof bowl that fits on top of a pot you have). Mix in the honey. Bring about two inches of water to a boil in the pot and place the bowl on top. Watch the chocolate carefully so that it doesn’t burn, stirring gently while the chocolate melts.

~Drop by the teaspoon over the peanut butter mixture and place back into the freezer. Freeze for 20 minutes. Take out, and using a butter knife pop them out. Keep in the freezer or refrigerator or they will melt.
