Here are the cookies that I made over the weekend. And then tortured you with the pictures and no recipe. But here’s the recipe now! Now go bake these for your hubby every time you come home with some new running shoes, gadget, skirt, etc…and I’m 99,9% sure he’ll let your shopping slide! 😉
1/2 C non-dairy margarine (Earth Balance)
3/4 C natural peanut butter
1/2 C organic brown sugar
3/4 C organic powdered sugar
1/2 tsp vanilla
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 C whole wheat flour
1/2 C unbleached organic flour (I omitted this and just used about a 1/4 C more of the WW flour)
1/2 C natural PB chips
1/2 organic chocolate chips
Beat margarine, PB, sugars, and vanilla until blended well.
In a separate bowl, mix baking powder, baking soda, salt, and flour(s).
Add dry mix to the butter mix.
Mix until it’s a dough-like substance.
Chill for 30 minutes.
At this point, you can either eat the dough right then and there, OR bake them on a cookie sheet for 10-12 minutes at 350 degrees. Don’t over bake because they will still be a sort of “dough-y” cookie. I baked mine for more like, 9-10 minutes.
