Spinach and Feta Quesadillas

This has been dinner probably 3 times in the past 2 weeks – both me and The Hus love these and they are quick & easy (2 things I like in a recipe). I didn’t even think about taking pictures of these lovely quesadillas because well, I didn’t know I was going to start on blog and post pictures of everything I eat! They do look like normal quesadillas though, so you can picture that. I’m giving you actual measurements of the recipe, but i’ll be honest….I just eyeball everything and just start dumping.

1/2 C Spinach – squeezed

1 TBS. herbs – parsley, dill, oregano, etc….I use Trader Joes 21 season salute (it’s our go-to spice for pretty much everything

1 Green onion – chopped

1 handful crumbled feta cheese

salt and pepper

2 – 8 inch tortillas

2 handfuls of shredded mozzarella cheese

Mix the spinach, herbs, onions, feta, salt and pepper in a bowl. Melt a little butter in a pan and then place a tortilla in the pan. Sprinkle some cheese on the tortilla, then the spinach mixture, then more cheese. Top with the other tortilla. Cook until it’s brown on both sides and the cheese is melted. (We added some hot sauce too b/c we just love us some Frank’s around here!) (You could even add other stuff too if you wanted – we’ve added black olives before, mushrooms, garlic, banana peppers…)
