Spinach Lasagna

2 – 10 oz. boxes/bags of chopped, frozen spinach

2 C. ricotta cheese (I used cottage cheese since we aren’t fans of ricotta)

2 eggs

pepper

garlic powder

basil

oregano

2 C. shredded mozzarella cheese

24 oz. can tomato sauce

9 whole grain lasagna noodles

Spray 9×13 pan. Mix ricotta or cottage cheese, eggs, and seasonings. Add spinach. Spread some sauce on bottom of pan. Lay 3 lasagna noodles on top. Top with spinach mixture and repeat layers. Pour remaining sauce on top and sprinkle with shredded cheese. Cover with foil and bake 45 minutes at 350 degrees. Remove foil and bake another 20-30 minutes.
