You can still make your pecan pie and eat it too.

Since trying to pay attention to food ingredients, and trying to find substitutions for toxic chemicals, one recipe that was driving me up a wall was pecan pie. Like, you might as well just drink the bottle of corn syrup & then purchase your coffin.
So last year, I found this recipe for pecan pie that has NO CORN SYRUP!!! Yes, it still has sugar & flour, but you can substitute those for “healthier” sugar & flours. Last year, I just used cane sugar & whole wheat flour & you couldn’t tell a difference. Noone could tell there was no corn syrup.
So I figure this is a recipe worth sharing for turkey day – since I’ve made it, tried it, loved it. 🙂

Pecan Pie (withOUT corn syrup!)

1 C. light brown sugar

1/4 C. cane sugar

1/2 C. butter

2 eggs

1 TBSP. whole wheat flour

1 TBSP. almond milk

1 tsp. vanilla

1 C. chopped pecans

Preheat oven to 400. Beat eggs until foamy, and then stir in melted butter. Stir in sugars and flour and mix well. Add milk, vanilla, and nuts and mix. Pour into unbaked 9 inch pie shell. Bake for 10 minutes at 400 degrees, then reduce temperature to 350 and bake for another 30-40 minutes, or until done.

Then give thanks for recipes like this, and savor every bite.

(And sorry, I don’t have a picture of the pie I made last year. 😥 Just know that it looks exactly the same as a pecan pie WITH corn syrup. 😄 )

After the turkey was in (a little too early), and the other sides were ready, I started my desserts! Best part ya know! I made my Nana’s apple pie, pecan pie (WITHOUT corn syrup!!), and a pumpkin crunch. And home made pie crusts all around!

Friday night, our tree was put up. My mom was having a kick out of this because V was supposed to be doing the tree, but Philco and I kinda kept taking over and telling him what to do. :/ We are used to having things precise in our house…It was good practice for us anyways. My mom took pictures of the ornaments to make sure they stayed in the same place as V put them. Along with the 2 red ornaments that he had to put on – they are still there too!

OH! Between all the food and fun stuff, I forgot to tell you about my workouts! Oh. Wait. There are no workouts to report to you. That’s right folks, lazy as heck for the last. FOUR. DAYS. Tomorrow it’s ON! And I’m committing to the burpee challenge so you should too!

Running for turkey?? Or just turkey…?

Me? Well, I’m just going for the turkey. Yessireee. I haven’t eaten turkey for the last 2 thanksgivings because I went vegetarian, but the past few months, as we all know, I’ve had the occasional “splurge day”. Some weeks more than others.

I had taken Tuesday as a rest day and did make it to the gym Wednesday for a 4 miler. Work had let us out an hour early and I have to say, I think work days should be 7-2:30 e’ryday! (I mean, if you really still  have to work at all…)

I have a really hard time picking out what workout clothes I’m going to wear that day and I have no idea why…

So. My sis and nephew were supposed to be driving to The ‘Bus last night, but since she was having some car problems, they weren’t going to come. Well, I was disappointed, my mom was disappointed. Philco was disappointed, The nephew was disappointed, and The Sis was disappointed. There was a lot of disappointment going on ’round here yesterday. My mom had to work 2nd shift yesterday, so we decided that I’d go pick them up and bring them back here and surprise her. It’s thanksgiving y’all and well, we needed them here. V has to put up mine and my mom’s christmas trees, bake our christmas cookies, take us ice skating for his b-day (which is the 5th and he’s going to be 7. SEVEN. I can’t even believe it. I remember the day he was born like it was yesterday.), so as you can see, it had to be done. I had to drive there and make sure they were here for baking, setting up trees, turkey.

Well, I have the turkey in the oven, pumpkin crunch was made last night, and now I’ll go start on everything else…Hopefully my mom isn’t still waiting for me to pick her up for the gym and she knows we aren’t going now…haha. (We were going to go to an early total body conditioning class with Beth.) Instead, we’ll just eat turkey and dessert and lay in comas on the couch watching movies and fighting like power rangers with sabers and swords and all…(plastic of course…)
