1-2 Green peppers, chopped (I always add a serrano pepper and a jalepeno pepper)
1 Package vegetarian ground beef
Jar of pasta sauce (I use Trader Joe’s because it has the least amount of ingredients)
1 C. Brown Rice, uncooked (again, I use Trader Joe’s. They have a box with 3 bags of rice and all you do to prepare the rice is heat it up in a pan for 8 minutes and BAM! it’s ready!)
1 C. shredded cheese
Prepare rice. Mix all ingredients except 1/2 cup of cheese. Pour in 9X9 pan. Sprinkle the remaining cheese on top and bake at 350 for 35-45 minutes.
