White Chicken Chili

1 pound cooked chicken breast, diced up (I used meatless chicken for a vegetarian version)

1 medium onion, diced

2 cloves fresh garlic, or 1 1/2 tsp. garlic powder

1 TBS olive oil

2 cans great northern beans

2 cups chicken broth (I used organic, “no chicken broth” by Imagine)

7 oz. can diced green chili’s

1 tsp. salt

1 tsp. cumin

1 tsp. oregano

Pepper

1/4 tsp cayenne pepper

1 C. sour cream

1/2 C. heavy cream

If using real chicken, heat oil in a large pan and add chicken, onion, and garlic. Saute until chicken is cooked. (If using “fake, meatless” chicken, it’s already precooked so you can skip this step.) Add the broth, beans, chili and spices. Bring to a boil and then reduce heat and simmer uncovered for 1.5 hours.

***UPDATE*** I would not use meatless chicken in this again. Use the real stuff.
