Zucchini “Tots”

Once again, please don’t ask me where I got this recipe ‘cuz I can’t remember…Just know that I did not create it myself – I used a recipe that someone else created. And now i’m stealing it to share it with you but taking no credit whatsoever. 🙂 The only credit I want, is that I’m great and capable of reading and following directions. K? Thanks.

These are seriously one of the best things I’ve made lately. And SUPER easy – right up my alley.

1 C. grated zucchini (but just go ahead and grate 2 cups, maybe 3, because you are going to want more)

1 egg

1/4 C. grated onion (I just chopped mine up small)

1/4 C breadcrumbs

1/4 C. Parmesan cheese

(I also added some Trader Joe’s 21 season salute)

Squeeze water out of the zucchini. Mix all ingredients together. Pack into mini muffin pans. Bake for 15-20 minutes at 375*.

And then attempt to not eat all of them so that you can share them with your family. 🙂 (Don’t mind the heart-shaped pans, I didn’t have mini muffin pans, so I just “made these with love”. For myself.
